Sequoia Whisky Single Malt Bio
The Vercors Distillery is located in an old 16th century farm. It is the only French whisky distillery whose bottlings are certified in Organic Agriculture and distilled at low temperature. The "Nautilus" wash still distills gently at only 50°C, instead of the usual 100°C. This sublimates the aromas of the malted barley and gives this Whisky elegant and subtle aromas, rich in seductive fruity and floral notes.
This whiksy is not cold filtered, which gives it a natural color. It is brewed, fermented, distilled, aged and bottled on site. It is made with malted barley from organic farming. Its particularity is that it is brewed with spring water from Vercors. Another specificity is that it is distilled at 50°C in a low pressure still designed by the distiller. It ages for three years in oak barrels in the gentle atmosphere of an old Vercor silkworm farm.
A straw yellow color enhanced by some subtle golden reflections.
Subtle cocktail of dried flowers, sweet spices and acacia honey. After shaking, notes of fresh bread and precious wood appear.
A mouth presenting a very nice balance between structure, smoothness and aromatic profile. After a few minutes of aeration, the scents of dried flowers compete with the flavors of fresh bread and honey.
An aromatic final note which stretches out in length and which seduces by its mineral and tonic accents.
