Our organic Vodka is produced in the Camargue, in the south of France, in a vast protected region where horses, flamingos and bulls have lived freely for centuries. It is exclusively made from soft wheat grown organically from the estate. The taste properties of our wheat vary each season depending on the climatic conditions of the year. The control body ECOCERT certifies that the Vodka "Grands Domaines" respects the rules of organic production throughout its manufacturing process. Chopin Rye Organic is crafted from a heritage rye variety called Dankowskie Ruben, sourced from just one local farm near our distillery. It is hand-crafted in small batches, following traditional distilling techniques and strict requirements for ecological processing, and is blended with natural spring water from our own well on property. The spirit is then rested for six months to bring out its full flavor before bottling.

With a mash bill of 100% millet coupled with KOVAL's signature distilling technique designed to highlight the true flavor of the grain, KOVAL Millet offers whiskey lovers a single grain expression with a truly singular drinking experience. Notes of nut and vanilla define the palate, with a clean and bright finish.

Using Rye that is locally and sustainably sourced in the Midwestern US, allow us to present a fresh and light whiskey that offers mellow and somewhat sweet notes of maple and candy corn, with a classically spicy finish. Works beautifully in classic cocktails such as a Manhattan, Sazerac, or Scofflaw, where its grain-forward spiciness balances out the sweetness of other ingredients.

It's a traditional American spirit, once made by George Washington in his distillery, and was widely appreciated in the New World before the advent of bourbon following the whisky rebellion. Our unaged Koval White Rye is best enjoyed neat, but it also reveals its full character, whether on the rocks or in classic and contemporary cocktails. Barely touched by the barrel before bottling, this whisky captures the authentic essence of rye, unadulterated by oak.

Philtre vodka is organic and has no added sugar. It is made in France, in the Cognac region, from just two quality ingredients: organic soft winter wheat and Gensac spring water, renowned for its purity.

This 100% organic spirit is distilled with a unique combination of classic gin botanicals and local Scottish botanicals to create a rich, floral spirit. Perfect with a tonic or in any classic gin cocktail. Our ten botanicals are a blend of traditional gin flavours with locally foraged botanicals: juniper, coriander, angelica, liquorice, chamomile, grapefruit, bog myrtle, thyme, sorrel, heather.
