Our gin is the result of distillation and maceration. We use a certified organic grain alcohol of European origin (mainly from Italy) which brings all the smoothness and finesse of Origen gin and allows the balance of the selected aromatic notes to express themselves.
The distillation of the grain (wheat) is carried out in a pot still coupled with a direct rectification on column. The distillation column has 9 plates. This means that after the first distillation in the pot still, the alcohol undergoes 9 stages of rectification which gives it its finesse and smoothness. To ensure optimal stability, we work with natural aromas.
TASTING NOTES
At the aromatic level, the maceration of the plants of which "immortelle" composes the main flavour, and Mediterranean spices, is done in a water-alcohol mixture whose alcohol content depends on the fragility of the plant. This maceration, which lasts from 2-3 days to 15-20 days, is then followed by distillation to extract and concentrate the aromatic notes and obtain a colourless distillate (the natural aroma present in Origen).

Nordés is produced slowly and with great care. A careful selection of the best neutral alcohols, together with the use of white Albariño Galician grapes, are the indispensable base of our gin, giving Nordés its unmistakable fresh and soft character. The distilling process is enhanced with the maceration of 11 botanical elements.

This 7-year-old Irish Single Malt whiskey from Glendalough in Wicklow was matured in American Bourbon barrels and finished in Japanese Mizunara barrels from Hokkaido, in the volcanic north of Japan.
