The Charentais terroir imparts unique properties to the Noir de Bourgogne variety, naturally rustic, and limits its yields. The harvested berries are small, but very rich. The berries are soaked in pure alcohol to extract all their flavours, then pressed and filtered. Sugar is added to this natural fruit infusion to obtain the Crème de cassis. Complete control of every stages of the process, from the cultivation and harvest of the fruits at their ripest to their transformation by Merlet, guarantees, together with the very high concentration of macerated fruits, the intensity and complexity of the final product.

Cihuatan Xaman, originating from El Paisnal, San Salvador, El Salvador, is a 16-year-old rum with 40% Alc./Vol., aged for 15 years in American oak ex-Bourbon barrels, then finished for 1 year in Mayan ceiba casks. At the heart of every bottle of Cihuatán Xaman lies the Sleeping Woman, a Mayan goddess and guardian of the Cihuatán valley. Legend has it that, under the veil of the night, the Sleeping Woman would search for the brightest star in the sky. It was Xaman, the god of the North Star.
TASTIN NOTES
Nose: Pungent peaty smoke. Phenolic with a little coastal breeze.
Palate: Lovely sweet peatiness. Some iodine and sea salt balance with vanilla notes and some spice
Finish: Waves of smoke. Fantastic length.
In the whisky that made Cu Bocan's name, light smoke intertwines with rich citrus and exotic spices. Subtly smoky, surprisingly sweet, it opens up the world of lightly peated whisky.

The whisky comes from an undisclosed distillery on Islay - it's a closely guarded secret as to which one...
