Sauternes is made from grapes which have undergone ‘noble rot’, causing their moisture to evaporate, hence concentrating the sugars. Glendalough's Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside. Glendalough choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging. These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

TASTIN NOTES

Nose: Pungent peaty smoke. Phenolic with a little coastal breeze.

Palate: Lovely sweet peatiness. Some iodine and sea salt balance with vanilla notes and some spice

Finish: Waves of smoke. Fantastic length.

Mermaid Zest Gin is an aromatic and tangy infusion of Mermaid Gin with summer citrus and wild foraged coastal plants. Grapefruit and cascade hops are blended with island bergamot, lemon zest and rosemary, "the dew of the sea", then distilled and infused with the signature gin. The result is a zesty and fresh spirit with a hint of sea air. Aged in 1st-fill ex-bourbon casks, then for a time in 500-litre Spanish Sherry casks, which give it its hazelnut-brown color.
