Koval Wheat is a limited release American whiskey produced in small batches with a 100% organic wheat mashed potato bill. This expression pays homage to the tradition of American wheat whiskey, while differentiating itself from the rest of the Koval line due to the high alcohol content. It is aged in small new and charred casks and bottled at 55% vol. without chill filtration. The water - an essential ingredient in the distillation process - comes from Lake Michigan and is purified using natural charcoal. The terrior of ABK6 is a chalky hilltop at 154m of altitude. For this spirits 100% Ugni-blanc grapes are used. The vinification took place in thermoregulated vats. The distillation was a double distillation in small Charentals pot-stills. This Cognac is aged in new and old french Limousin oak barrels of 350-liters.

Aged in sherry casks for over 3 years. The nose expresses notes of ripe fruits and chocolate. The palate mirrors the nose with additional notes of citrus and lemongrass. Sweetness and acidity are elegantly balanced. The light finish evokes the pure spring water of Tottori used during distillation.

TASTIN NOTES

Nose: Pungent peaty smoke. Phenolic with a little coastal breeze.

Palate: Lovely sweet peatiness. Some iodine and sea salt balance with vanilla notes and some spice

Finish: Waves of smoke. Fantastic length.
