Glendalough Rose Gin
To create Glendalough Rose Gin, the distillers remixed their Wild Botanical Gin recipe, bumping up the fruit, flower and spice notes. In addition, the distillers added three types of rose to the mix - specifically wild rose from the Wicklow mountains, heritage rose and Damask rose (a particularly esteemed variety). The result is as fragrant as you might imagine, though balanced brilliantly with the classic botanicals at its core. Should make a great Aviation cocktail...
This fresh, rose-petal gin was first made to honour our head distiller's mum, Rose, at his little brother's wedding. Rose had recently passed away, and this was his way to have her there in spirit - literally.
Carefully-tended flowers, from her rose garden are slowly vapor distilled with wild roses and plants from the mountains around the distillery to make this an intensely floral gin.
After distilling, the gin is then further infused with even more roses to deepen the flavours and give it its lovely pink hue.
This is not "just another pink gin", far from it. The depth and complexity really needs to be tasted to be understood. Floral, fragrant and flavourful, it is some of the best, most interesting gin we've made and comes after a lot of experimenting with plants, fruit, spices and flowers.
Fresh flowers and fragrant juniper sweetness, blended by orange oil sharpness cutting through. A hint of liquorice slowly appears.

We forage wild plants from the mountains around the distillery to make this extraordinary gin. These sustainably picked plants go fresh (not dried) into the still within hours of foraging. They are painstakingly slow-distilled to tease out delicate flavors in tiny batches. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first, putting this gin on a whole other level of flavor. The knowledge, experience and effort that goes into each bottle is what makes it so special. We love it in a G&T garnished with a wedge of grapefruit and a freshly torn sprig of basil. Or try it in a Tom Collins.
Using Rye that is locally and sustainably sourced in the Midwestern US, allow us to present a fresh and light whiskey that offers mellow and somewhat sweet notes of maple and candy corn, with a classically spicy finish. Works beautifully in classic cocktails such as a Manhattan, Sazerac, or Scofflaw, where its grain-forward spiciness balances out the sweetness of other ingredients.
With a mash bill of 51% corn and 49% millet, KOVAL Bourbon offers a drinking experience that is balanced, approachable, and unparalleled. The unusual grain combination provides notes of mango chutney and vanilla on the palate, with a peppery caramel finish.
